A sweet treat that changes!
This cake is incredible! Definitely a shame I bought the last one. It's my first actual tea cake, & it is a treat! Every gong fu session has been different! The first time I tried it, the tea had a sweet, fresh-wood flavor with a taste similar to the oak barrel used to age whiskey. Around the 5th cup, the flavor changed to a sweet, syrupy, floral flavor similar to Yue Guang Bai ("moonlight") teas I've had before. The tea made my mouth water after drinking. About the 8th cup, a strong note of sweet plum emerged, as did some notes I associate with Ye Sheng ("wild") teas. I got 2 or 3 more cups with the plum flavor before the tea started to fade.
The second gong fu session was very different. There was no oak barrel taste, only sweetness. I suspect this one had more of the bai hao yin zen ("silver needles") leaves in it because it took 3 cups to start releasing its best flavor. Once again, the 5th cup was very flavourful. Around the 8th cup, the taste was similar to pancake syrup & gardenia flowers, with very strong Yue Guang Bai ("moonlight") flavor. I kept increasing the temperature & time, and I got 12 good cups from 3.5g of leaves in a 90ml gaiwan.
I look forward to whatever surprise flavors I get as I continue to enjoy this delightful sheng cake. Thank you so much!
